The JCPH Food Protection and Safety Program works to prevent foodborne illness outbreaks and assure that Jefferson County citizens and visitors are provided with safe food. Staff routinely inspects food service operations, such as restaurants, delicatessens, school cafeterias and retail markets to ensure compliance with the New Colorado Retail Food Establishment Rules and Regulations effective March 1, 2013. According to Centers for Disease Control 2011 estimates, foodborne illnesses cause 3,000 deaths in the U.S. each year and more than 48 million illnesses (roughtly 1 in 6 Americans) per year.
