The JCPH Food Protection and Safety Program works to prevent food-borne illness outbreaks and assure that Jefferson County citizens and visitors are provided with safe food. Staff routinely inspect food service operations, such as restaurants, delicatessens, school cafeterias and retail markets to insure compliance with Colorado state regulations. According to Centers for Disease Control 2011 estimates, food-borne illnesses cause 3,000 deaths in the U.S. each year and more than 48 million illnesses (roughtly 1 in 6 Americans) per year.
